Moose Meatballs
Ingredients:
- 500 g minced moose meat
- 1 large onion, finely chopped
- 1 egg
- a dash of Jamaican pepper
- 75 ml rum
- 100 ml of game stock
- 25 ml 35% cream
- 75 g cranberries
- 35g butter
- flour
- sugar
- salt and pepper
Preparation:
In a stainless steel bowl, place the meat, onion, egg, Jamaican pepper
and 25 ml of rum. Add salt and pepper to taste. Mix well and let marinate
overnight.
Make small balls of this fragrant meat and roll them in the flour before
browning them in butter in a thick pan or enameled cast iron cauldron for 4
minutes.
Remove them and deglaze the pan with half of the remaining rum. Add the
game stock and cranberries. Let cook completely, that is to say about ten
minutes. Pass through a blender and return to the pan before adding the
meatballs and the juices they have made. Cook for another 10 minutes. Add a
little sugar to the sauce to reduce the acidity of the cranberries.
Pour the cream and mix well. Season with salt and pepper to taste, add
the rest of the rum, heat for another minute and serve hot with the aperitif.
