Cherry Duck

ingredients
- 1 young duck
- 1 thin slice of smoked bacon
- 1 kg. Of cherries
- 30 g. Of butter
- 1 lemon
- 1 liqueur glass of cognac
- 1 bouquet garni
- Salt pepper.
Preparation
Salt and pepper the inside of the duck. Add the bouquet garni. The bridle. Place it on the oven rack over the drip tray. Bake in a hot oven (th 8) for 15 minutes then at th. 6 for 30 minutes. Brown on all sides. Prick the duck with a fork: if the juice runs pale pink, the duck is cooked, Pit the cherries and sauté in butter for 3 minutes. Add cognac, flambé and pepper. Deglaze the broiler pan with a little lemon juice and mix with the cherry juice, Arrange the cherries around the duck on a hot dish. Top with the sauce.
