Peking duck

  • 1 duck of 2 kg. Ready to cook
  • 3 tablespoons honey
  • 2 tablespoons of vinegar
  • 2 tablespoons of Chinese alcohol (Mei Kuei Lu) or Xeres
  • 1 new onion with stem
  • 1 small red pepper
  • 1 dl. Of soy sauce
  • Coriander sprigs
  • 1 carrot.



Preparation

Dip the duck in boiling water. After 5 minutes of boiling, drain and rinse thoroughly with cold water. Towel with absorbent paper. Mix the honey, vinegar, alcohol, soy sauce, 2 dl. Hot water. Brush duck skin with this mixture. Hold the wings apart and hang the duck by the neck in a ventilated place, one night. Preheat the oven to 2000, put the duck in the broiler pan on a wire rack and cook for 30 minutes, lower the thermostat to 1900 and extend cooking for 1 hour by turning often and sprinkling with the cooking juice. Wash the onion, cut into 10 cm sections, slip them into a small pepper ring, split them at the two ends and put them in cold water to make them curl.
